Christmas dinner


 This was day 1. see the plastic wrapper still on the the bottom.  add a few sprigs of rosemary and wrap it up in cheese cloth.  i use the whole package, change after the first day and then every other day after that.


 This is what it looks like all wrapped up.  i call it "the mummy" i store it in the back of the fridge, so its not in the way.  but its a beast its in the way.


 This was 6 days in


Day of.  i took it out of the fridge around 1:30 and this photo was taken around 3:30.  the rub is simple, salt and pepper, garlic and onion powder, mustard powder, paprika, some thyme and enough EVOO to make it all wet and then rub it on (first i tied it all up).


 Tied up and rubbed down. some veggies to flavor the au jus. onions, carrots, and bay leaves.   40 min on 450 and then 2 hours on 275.  i cooked it to an internal temp of 125.  we like our meat rare!


 Side dish, potatoes au gratin.  yukon gols potatoes, layered with an herbed cream sauce, mozzarella and parmesan cheese. 


 All bubbly in the oven!!


 This looks like the Flintstones dinner!!

How do you work this crazy thing!?!?

hi, I'm really new at this! i really love to cook for my family.  no fancy plates, no professional photos, just good food cooked with love!!    I've been cooking since i was big enough to reach the stove, i spent a few years working in a kitchen but the hours were insane.  so now i cook great meals for my family.  i wish scratch and sniff worked online.
